Title: University Dietitian fonds.

Administrative history: When Tache Hall residence opened in 1912, it accommodated two-hundred women and three-hundred men. The university dietitian was responsible for the nutrition of the residents and was generally aided in this task by an assistant dietitian. In addition, she oversaw the catering for various university functions, such as convocations, president's luncheons, dances, banquets, and Christmas dinners. The university dietitian also catered for external events that took place at the university, such as Manitoba Women's Institute Conventions. In 1970, the position of Dietitian was changed to Director of Food Services. The following people held the position of dietitian between 1915 and 1970: M. R. McKee (1915-1916), Olive R. Cruikshank (1916-1920), Lenore Panton (1920-1948), Beatrice Brownlee (1948-1958), Anna Rydeen (1958-1965?), and Louise Smith (1965-1970).
Custodial history: The custodial history of this fonds prior to its arrival at University of Manitoba Archives & Special Collections is not available. The fonds was originally titled "University of Manitoba Residence Dietitian's Catering Records". Its present name was adopted in March 2002 to reflect the provenance of the fonds.
Scope and content: The fonds consists of records kept by the university's residence dietitian documenting the catering activities of the dietitian. This includes four record books in which are entered the names and dates of events, menus, the numbers of people expected to attend, table arrangements, and plans for preparing and serving. These books also contain scattered references to the operation of Tache Hall residence.
